Eating raw eggs is not without risk, According to the USDA, 2.3 million eggs are contaminated with salmonella each year. This bacteria is a common cause of food-borne illness, aka food poisoning, which can last up to one week and in some cases can make people seriously ill. Washing the eggs before eating them raw won’t help, since the bacteria can thrive inside the intact eggs, But there is a safer alternative to pumping up your post-workout concoction: Pasteurized eggs have been treated to kill salmonella, making them safe to use in shakes and drinks without cooking them first. Just look for the word pasteurized on the label to make sure the eggs are bacteria-free.

So it’s not a good idea to throw a raw egg into the blender. The risks of eating eggshells are obvious. Eggshells must be boiled as there is a possibility they could be contaminated with bacteria such as Salmonella enteritidis. Furthermore, our bodies only absorb 50 percent of the protein in an egg when we eat it raw compared to 90 percent when we eat it cooked. So the moral of the story: it’s much better to consume cooked eggs as opposed to raw in your smoothie. Use a good quality protein in your smoothies instead.

I’ve added an unconventional ingredient to my morning mix, 1 or 2 raw whole eggs, blended with some almond milk, frozen blue berries, frozen banana, a pinch of greens, and flax seed. Eggs are a great source of protein and other essential nutrients. They are inexpensive. They enhance the texture of smoothies. It’s fantastic. There are inherent risks to eating raw and undercooked eggs, meat, poultry, and fish. The estimates of getting a literal bad egg are in your favor:1 in 20k CDC estimate during the height of the problem in the 90’s, 1 in 20k, 1 in 10k NY Times. Young, healthy folks are rather unlikely to be seriously affected if they were to ingest the bacteria. Enjoy at your own, rationalized risk.
